The code for indicating United Kingdom in the EHIC is UK (as for many other EU staffs)
Do you know the what is the code system to be used for the UK code ? (ISO 3166 code is GB)

iana uses uk as well, but the code in the root zone database is .uk

I would say that in this codeSystem that is UK

EU uses ISO 3166 (except for Greece EL). UK and GB are no longer in the list of EU codes https://publications.europa.eu/code/pdf/370000en.htm
UK is actually an official ISO 3166 code, albeit with a status of "exceptionally reserved", according to https://www.iso.org/obp/ui/#iso:code:3166:UK it refers to the United Kingdom. So it is a synonym of GB https://www.iso.org/obp/ui/#iso:code:3166:GB

Wouldn't see a reason for GB using a different code for EHIC, (which I presume GB will still want..........)

Not sure that "exceptionally reserved" means that can be used, my interpretation is that it cannot be used for identifying 'other' countries in ISO 3166..
