As a provider of HL7/IHE/DICOM training courses we're providing a FHIR overview, a FHIR profiling, and a FHIR advanced training course. But those are not aimed at academia persé. Next to that we provide post-grad courses related to IHE XDS and 'interoperability standards' at Eindhoven university in the Netherlands. These are relatively brief 3-hour sessions.

The Heilbronn University of Applied Sciences in cooperation with the Universidad de Chile Santiago, Chile held 6 different BPMN and FHIR workshops over the last 2 years. Focus was analyzing health processes, identification of inter-organization communications and the usage of FHIR to do this communication in an interoperable manner. The last workshops were more profiling and implementation prototyping with hapi and VUE.js frontends.
