http://hl7.org/fhir/ValueSet/days-of-week we would have to select multiple values, support for code 'all' would be beneficial.

The downside to "all" is that if you are looking for a Location that is open on Monday, you need to search for both Monday and All. If you only look for Monday, you would not get any location that is open every day.

+1 for Cooper's comment. I'd think that availability information is rather static, so the pain of adding multiple codes isn't too bad.

Maybe stupid question, but shouldnt the server check for locations that are open on Mondays and all days instead the client asking for both Monday and all? Maybe there would also be something like weekdays

What do you want to do in data and what in services?
I like storing data atomically (mon, tue, etc.) and leaving aggregation to the service (retrieve "week days").
