Why does http://hl7.org/fhir/StructureDefinition/Resource have content in Resource.differential? (Visible at http://build.fhir.org/resource.profile.xml.html) It is based on itself and it has no differences from itself.

it is not based on itself. It inherits from nothing and it's differential is the difference between nothing and resource

Why is snapshot different to differential?

Because the snapshot pulls in elements from external datatype definitions.
