Being new to FHIR, I'm wondering if there is an official list of the defined resources (R4), easy to browse for doctors and other people that are routinely not into health-IT? There is e.g. https://snomedbrowser.com/ for Snomed CT, and I'm now looking for something similar as a first starting point to see which resource definitions exist already and which may need to be added as own extensions. Thanks!

The list of core-resources are listed on http://hl7.org/fhir/.
What I think is more of interest for you are the profiles, when these core resources are applied to use cases. But, as it says, these profiles are use case specific and might differ slightly between different scenarios. An example from nursing: For a nursing summary some information might not be so important, e.g. who exactly entered the different nursing problems. For the documentation on the other hand, this information is important.
Published resources can be found on https://registry.fhir.org, published implementation guides on https://registry.fhir.org/guides.
By the way: HL7 Deutschland is working on an implementation guide for "Deutsche Basisprofile": https://simplifier.net/guide/basisprofil-de-r4/home. On Monday the ballot for comment starts. Also there is the International Patient Summary (IPS, https://build.fhir.org/ig/HL7/fhir-ips/), where some relevant resources might be found.
