It does provide a definition, though you have to read the whole section to get it.

and it doesn't actually use "STU" which is somewhat of a handicap. HL7 has nothing else, so far as I can see

2.7.0.1 is the section I pointed to, which included 2.7.0.1.1 which contains the STU wording near the end.
