Hasn't been updated in almost 2 years and is certainly much narrower than the actual list of Organizations. On the other hand, it's the best we've got in terms of surfacing organizations who want to list themselves...

It likely is not needed anymore. It would be easier to maintain a page that is the organizations NOT interested in FHIR. Seems that it not being updated in 2 years is already answering your question.
