I noticed in the current build, the actual value for the structuredefinition-fhir-type changed from valueCode to valueUri. Since the value is still just e.g. "string" I'm wondering whether that's a permanent change, a bug or an experiment?

no it's a uri following the rules of ElementDefinition.type.code
