sure - though it's up to you to support it of course :), and the install instructions are - non existent! Here's the repo: https://github.com/davidhay25/FHIRSampleCreator.
You'll need a node.js server to execute server.js, and a mongo server as well. The start page is resourceCreator.html.
Any particular reason to set up your own copy?

Oh, it occurs to me that it's perfectly feasible to run it off the web and point it at a local server. At the end of this post (https://fhirblog.com/2016/10/19/setting-up-your-own-fhir-server-for-profiling/ ) there's a note about how to do that.
