I'm going to store a value that refers to pre-surgery risk assessment (in Germany). I think such a value would be related to the FHIR Procedure resource, but I cannot find a suitable element for the value in the FHIR Procedure resource. Any idea?

A risk assessment would generally be captured as an Observation, not a Procedure.
