Topic: example orchestra fhir mapping scenario?

for a student course i'm looking for mapping to fhir with orchestra. i found a video explaining the concept, however i can't find any sample scenarios, does somebody has a project he is willing to share? I think the fhir schemas need to be relaxed, they seem to be too complicated to directly to use in the engine.
