How present ethnic of person in fhir. I fould some things like Patient extensions (ex: religion, nationality,..) but I'm not found ethnic

That is a US specific concept that will not be found in an international standard. See US-Core https://www.hl7.org/fhir/us/core/StructureDefinition-us-core-patient.html

@Dongtu is from Vietnam, where there's also ethnicity though the meaning and value set is very different. When I was there we proposed this as a vietnamese national extension. You should ask on the #việtnam extension (btw, I will be there in April for an AEHIN... )
