if we have more than these 3 LP CODES

we are allowed to use and output other LPs to represent more categories? correct? we are not limited to only the above 3 categories?

I assume you are talking about the US core profile (https://www.hl7.org/fhir/us/core/StructureDefinition-us-core-diagnosticreport-note.html), the answer is yes, that binding is extensible so if you have other categories you can use them

More specifically, if you have other categories that don't fall within one of the existing categories, you can use your own. If they're sub-categories of one of these 3 codes, you must specify the 'standard' codes in addition to your own.

we have other LP categories that are used to categorize our types of reports. are these allowed based on the IG or we can only use the 3 LP LOINC codes described?

You're allowed to use additional codes, but you MUST use those codes if they apply. I.e. if you're dealing with some kind of radiology report, you must send LP29684-5. You're free to send additional codes though.
