is device (https://www.hl7.org/fhir/device.html) the right resource to model an it system? And what would be the corresponding deviceType (http://hl7.org/fhir/ValueSet/device-type )?

Why did you asked? You have a specific code for the deviceType in mind?

no, it's just that there were already early discussions on this, and we shoudl eventually consider the different meanings of "IT System" or "application"
