There is a value set for Observation categories (https://www.hl7.org/fhir/valueset-observation-category.html). Which categories should be mapped to Result section in Continuity of Care Document? Obviously social history, vital signs, and procedures all have their own CDA sections and Imaging and Laboratory seem like definite inclusions, but the others seem less clear

Good question, and not convinced that work has been done yet. However, I know the C-CDA-FHIR (bi-directional) mapping would get to that and the project leads (@Lisa Nelson and @Natalee Agassi ) would have insight into when.

That valueset was never composed to do what you want. The fact that there is some alignment is a happy coincidence.
