According to https://confluence.hl7.org/display/FHIR/Using+the+FHIR+Mapping+Language it should be possible to "Map HL7 V2 messages to multiple FHIR resources" and it says the validator_cli.jar can be used with the -transform option.
Unfortunately I can't find any examples on how to use the validator for a hl7v2->fhir transformation exactly; especially the parameters for -transform and -ig

There aren't standard transforms - you'd need to create your own. The validator just provides a mechanism of executing a transform if/when you've written one. You might also find the #v2 to FHIR stream useful as well as the v2 to FHIR IG
