I have been looking into servers that could be used for production. I see lot of test servers. For Eg. HAPI and others. I see vonk that is production quality. Are there other servers that could be used for production.

that depends on what you mean by 'production quality'. At least the following general purpose servers have lots of production use already:
- HAPI
- AidBox
- Vonk
There are lots of others built piecemeal from the parts of those that are open source too
